Brown Sugar
White sugar is characterized by the particularly pronounced purity of the crystals. With brown cane sugar, on the other hand, the focus is on the natural note and a classic, aromatic taste with a hint of caramel. These characteristic features are caused by the residual molasses contained in the sugar and other trace elements of the plant. Accordingly, brown sugar is an intermediate product that results from the manufacture of refined sugar. Due to the manufacturing process, brown sugar contains a larger proportion of the vitamins and minerals found in sugar beet or sugar cane. The natural and unrefined raw sugar is used in retail and industry.
Natural brown sugar is brown sugar that’s made by partially refining sugar cane extract whereas most brown sugar is made by adding molasses to fully refined sugar. Molasses is a thick brown to deep black, honey-like substance made when cane or beet sugar is processed. It is enjoyed as a sweetener in many countries, and most particularly in England where it is called treacle.
Golden coloured natural brown sugar is produced by extracting the juice from sugar cane heating it to evaporate water and crystallise the sugar, then spinning in a centrifuge to remove some impurities and further dry the sugar. It is commonly used in baking and to sweeten beverages such as tea and coffee.
Demerara sugar is so named because originally it came from sugar cane fields in the colony of Demerara -which is a region in South America. In the UK, this sugar is typically sold as demerara sugar after the Demerara colony in Guyana which was the original source of the sugar, although most of it is now produced in Mauritius.
So, although a sachet may have the word ‘Demerara’ on it, its just the origin of the name being used unless it can be proved (most unlikely) its real origin is likely to be Mauritius.
